Colchester Native and Rock Oysters
The warm sea temperature and an abundance of nourishment from the marshland surrounding the Oyster beds in Tollesbury, Salcott and Little Ditch creeks make the ideal environment for the Oysters to fatten. Native Oysters are dredged from the river Blackwater in March and laid in the shallow creeks for fattening. By the 1st September they are a plump gourmet’s delight ready for the table.
Our Rock Oysters are sold throughout the year and due to higher sea temperatures now spawn in the shallow creeks in July and August. With sustainable self sufficient stock in managed areas, these mature to a high quality Oyster.
