Beef & Venison Jerky from 'grass fed' cattle and wild Scottish Highland reared deer
We first came across jerky while on holiday in Canada. We got back to the UK and could not find it anywhere. Eventually after much trial and error, we came up with a product that matched what we’d tried in Canada. We still sell it as our Cracked Black Pepper variety.
So next came ‘trialling’ with friends and colleagues. From the feedback, we determined it should be tailored to the UK market, and so thinner, easier to chew, and not full of preservatives.
Quality ingredients = Quality jerky
The next stage was to set out a strategy. When we started out (in 2002), incidentally the very first UK producer of jerky - we knew we’d not be able to compete with the large American producers on price. South American produced beef jerky was already being imported. So we thought – as Scotch beef is considered highly across the world and produced right on our doorstep - that’s what we will use to make our jerky. We still do.
After a couple of years, we introduced Venison jerky after the same train of thought. All our venison is reared naturally in the wild in the Highlands of Scotland. Again, it is considered the ‘highest quality’ across the world. So our venison is sourced from the estates around the Northern county of Sutherland.
